Hawaiian pork chops

This was very very good! nice sweetness to the meat without much work at all. Too bad I overcooked the pork. If you have a thermometer be sure to use it and take the meat to 160 (not 180 like I did). This would be really good on pork tenderloin too.

Hawaiian pork chops

4 (1/2 inch) pork chops
1 ( 8 ounce) can pineapple slices
2 tablespoon brown sugar
1/2 teaspoon ground nutmeg

Drain and reserve juice from canned pineapple. Place pork chops on baking dish that is lightly sprayed with cooking spray.

Mix 2 tablespoons of the reserved pineapple juice with brown sugar and nutmeg. Spoon half of the mixture over the pork chops. Top with pineapple slices and spoon remaining mixture over the pineapple.

Cover and bake 30 minutes at 350° F. Uncover and bake 20 minutes longer, sauce over chops occasionally.

Pumpkin Spice muffins

2 point deliciousness! I made these wonderful goods for my kids for breakfast. Like the little goblins they are they gobbled them up.

Pumpkin spice muffins


1 box spice cake mix (don't follow the instructions on the box)
15 oz can pure pumpkin
1/2 cup egg substitutes (or 2 egg whites, well beaten)
2 tsp Pumpkin Pie Spice
Optional: 3/4 cup raisins or chocolate chips (I did mini chocolate chips)

1. Take out one rack from oven for cooling later.
2. Preheat oven to 350 degrees.
3. Spray 24 muffin pans with non-stick cooking spray.
4. Combine all ingredients with electric mixer.
5. Optional: Fold in raisins or chocolate chips.
6. Place a scant 1/3 cup of cake batter into each muffin well.
7. Bake for 20-22 minutes (look on back of box) or until toothpick inserted into the middle comes out clean.
8. Cool on wire rack.

Serves: 24 Points 2 each muffin

Colds in the nose go round' and round' round and...


I have not been cooking too much lately. At least one person or more in my family has been sick over the last three or four weeks. So far we have had Pink eye, possible strep throat, double ear infections, and apparently now I myself have some whole other "thing".


Recently I did try the Oreo 100 calorie cakesters. These are VERY good, in fact ...so good I could probably eat 3 whole packages, which would defeat that whole 100 calorie thing. These taste like little tiny rounds of heaven

Spoiled under 30's

I had it and how easy they've got it!

But now that... I'm over the ripe old age of thirty, I can't help but
look around and notice the youth of today. You've got it so easy! I
mean, compared to my childhood, you live in Utopia!

And I hate to say it but you kids today you don't know how good you've
got it!

I mean, when I was a kid we didn't have The Internet. If we wanted to
know something, we had to go to the library and look it up ourselves,
in the card catalog!!

There was no email! ! We had to actually write somebody a letter ...with
a pen! Then you had to walk all the way across the street and put it in
the mailbox and it would take like a week to get there!

There were no MP3's or Napsters! You wanted to steal music, you had to
hitchhike to the blasted record store and shoplift it yourself! Or you
had to wait around all day to tape it off the radio and the DJ' would
usually talk over the beginning and @#*% it all up!

We didn't have fancy krap like Call Waiting! If you were on the phone
and somebody else called they got a busy signal, that's it! And we
didn't have fancy Caller ID Boxes either! When the phone rang, you had
no idea who it was! It could be your school, your mom, your boss, your
bookie, your drug dealer, a collections agent, you just didn't know!!!
You had to pick it up and take your chances, mister!

We didn't have any fancy Sony Playstation video games with
high-resolution 3-D graphics! We had the Atari 2600! With games like "
Space Invaders" and "asteroids" and the graphics sucked! Your guy was a
little square! You actually had to use your imagination! And there were
no multiple levels or screens, it was just one screen forever! And you
could never win. The game just kept getting harder and harder and faster
and faster until you died! Just like LIFE!

When you went to the movie theater there was no such thing as stadium
seating! All the seats were the same height! If a tall guy or some old
broad with a hat sat in front of you and you couldn't see, you were just
screwed!

Sure, we had cable television, but back then that was only like 15
channels ( I personally did not have cable for the longest time, 3
channels and 4 on a good day) and there was no onscreen menu and no
remote control! You had to use a little book called a TV Guide to find
out what was on! You were screwed when it came to channel surfing! You
had to get off your sorry behind and walk over to the TV to change the
channel and there was no Cartoon Network either! You could only get
cartoons on Saturday Morning. Do you hear whatI'm saying!?! We had to
wait ALL WEEK for cartoons!

And we didn't have microwaves, if we wanted to heat something up we had
to use the stove or go build a freaking fire ... imagine that! If we
wanted popcorn, we had to use that stupid Jiffy Pop thing and shake it
over the stove forever like an idiot.

That's exactly what I'm talking about! You kids today have got it too
easy. You're spoiled!!!!!!!!!

You guys wouldn't have lasted five minutes back in 1980!

The good, the bad, and the annoying.


Spring is coming and I have the bug to organize everything...even my recipes.

I've had my eye on a few recipe software's (is that a word?) for awhile. Over the weekend, while my kids were deliciously sick with pink eye, strep, and ear infections, I finally had enough laptop time to check a few of them out.

Even though I have a wild dream of one day being organized, it will probably never happen. I'm attempting though by putting all my recipes in one place.

Lets start with the annoying.
Big oven
This is one of the top rated recipe software. It did have some really nice features, but it was annoying to attempt to enter any recipes. It took me over an hour and I still was not happy with the formatting. This one really just about put me over the edge.

The bad
Mastercook 9.0
I could not get a very good review of this software, because the trail only lasted 30 minutes! That 30 minutes did not even allow me any time to enter a recipe. Apparently the software is not very compatible with Windows Vista either (what is? hahah).


The good!
Living cookbook

Oh yes, there is some good in here :).
Living cookbook was beyond the easiest too use, and you can import tons of cookbooks from other websites. It only took me about five minutes to "capture" a recipe in this software. Another huge bonus, it calculates Weight watcher "my points" values for you. If your on weight watchers or another type of diet, this is a pretty good one to try in my opinion.

Famous weight watchers meatloaf muffins

I'm not exactly sure why these are famous, but in my house they will be famous for being completely disgusting. I may try to make them again maybe in five years if I can get this gag reflex to go away. I would definitely add something like Worcester sauce if you plan to try these.

WW Meatloaf muffins


1 lb extra lean ground beef
1 box Stove Top stuffing mix
2 egg whites
1 medium onion, diced

Mix together and divide into 12 muffin cups that have been sprayed with non-stick cooking spray. Bake at 350 degrees for 35-40 minutes.


Serve with ketchup on top, if desired. (Add points)

WW Points: 2 per muffin (or 3 depending meat/stuffing/additions)

Happy birthday baby girl!

My baby is ONE! It seems like just yesterday my husband and I were driving in several inches of fresh powder at 4:30 in the morning. I had a scheduled c-section and had to take my little guy to my moms first. It was a very nerve wracking drive all the way there.

I remember she came out all squished and seriously pissed at being born lol.
